All Sullivans Cove expressions are made from 100% Tasmanian malted barley. The wash is brewed nearby by brewers with decades of craft behind them, then double distilled in a one-of-a-kind, Tasmanian-built pot still affectionately named Myrtle. The initial pass, called the \"wash run,\" yields \"low wines\" at roughly 20% ABV. These are returned to the still for a second pass, the so called \"spirit run\" bringing the spirit up to around 70% ABV.
