Serving red wine well

The single biggest upgrade costs nothing: temperature. Australian room temperature is too warm for red wine — twenty minutes in the fridge before opening brings a red to its ideal 14–18°C and sharpens every flavour in the glass. Young, structured reds also reward a splash into a decanter (or just a vigorous swirl); older bottles prefer gentle handling. Pair weight with weight: light Pinot with duck or mushrooms, mid-weight Grenache with roast chicken, full-throttle Shiraz and Cabernet with steak, lamb and slow-cooked anything.

Should red wine be chilled?
