Reading the colour (and the label)

As a loose rule, the paler the pink, the drier the wine. Provence set the global standard: barely-blush salmon colour, bone dry, all strawberry, watermelon and citrus with a saline finish. Australian producers — from the King Valley to McLaren Vale — make both that style and rounder, fruitier versions with a little more colour and generosity.
