Champagne, Prosecco, Cava — what's the difference?

Only wine from the Champagne region of France, made by the traditional method (a second fermentation inside the bottle), can be called Champagne — that slow, yeasty magic is where the brioche and fine bead come from. Prosecco is tank-fermented in Italy's Veneto: fresher, fruitier, friendlier on the wallet, built for spritzes and sunshine. Cava uses Champagne's method at Spanish prices, and premium Australian sparkling — especially from Tasmania — now rivals good Champagne in blind tastings. Reading the label

The sweetness scale runs from Brut Nature (bone dry) through Brut (the everyday standard, dry) to Demi-Sec (noticeably sweet). Non-vintage (NV) wines blend years for house consistency; vintage Champagne comes from a single exceptional harvest and rewards patience. Grower Champagnes — made by the family that farms the vines — are the insider's buy: character and value the big houses can't match.

Is Prosecco just cheap Champagne?

No — it's a different wine on purpose. Different grape (Glera), different method, different goal: bright, easy fruit rather than toasty complexity. Great Prosecco beats mediocre Champagne every time.

What does Brut actually mean?

Dry — less than 12 grams of sugar per litre. It's the standard style for Champagne and quality sparkling. Extra Brut and Brut Nature are drier still; Demi-Sec is the sweet one for desserts.

How should I serve sparkling wine?

Well chilled — 6–8°C, about three hours in the fridge — and in a tulip glass rather than a skinny flute if you want to actually smell it. Open with a sigh, not a pop: hold the cork and twist the bottle.

Does Champagne improve with age?

Vintage Champagne can evolve beautifully for a decade or more. Non-vintage is released ready to drink — enjoy it within a couple of years while it's fresh.
