Founded in 1994, Sullivans Cove has come to define the small-batch luxury whisky category. Crafted in Hobart, Tasmania, this single malt is produced the traditional way, using entirely Tasmanian ingredients. Guided by the natural world and unhurried in their approach, the distillers pursue something close to perfection. Every cask is coaxed toward its own natural peak, with thousands of small judgement calls shaping how it develops. Because of this, no two batches are ever alike — and each one becomes a fresh chance to discover something new.

Tasmania is home to some of the cleanest water on earth, which makes it a natural fit for producing world class spirit. The island also boasts some of the finest barley-growing country in Australia, and the pairing of quality grain with quality water forms the backbone of any great whisky. All Sullivans Cove expressions are made from 100% Tasmanian malted barley. The wash is brewed nearby by brewers with decades of craft behind them, then double distilled in a one-of-a-kind, Tasmanian-built pot still affectionately named Myrtle. The initial pass, called the "wash run," yields "low wines" at roughly 20% ABV. These are returned to the still for a second pass, the so called "spirit run" bringing the spirit up to around 70% ABV. It's then brought down to 63.5% ABV before being filled into casks.

300L French oak ex-tawny barrels, resting for many years in Tasmania's distinctive climate, typically somewhere between nine and eighteen.

Sullivans Cove first announced itself to the world with its French Oak Single Tawny Cask, which became a legend in its own right — one of the most coveted whiskies anywhere and the release that put Australian whisky on the global stage when it took World's Best Single Malt at the 2014 World Whiskies Awards.
