Lime and lemon are the usual run, carried by bright acid and a clean, dry close. Australia picks it early and ferments it dry. Germany often leaves sugar behind, which is where the sweet reputation came from.

Young it is all citrus and energy. Left alone for five or ten years it turns toasty and complex, which is the real reason to buy a few. Best served cold alongside seafood, sushi or a hot afternoon.
