Citrus fruit and a steely edge, with acidity that keeps everything tight. It is almost never oaked, so what you taste is the fruit and the acid and nothing else.

Young it is all citrus and energy. Left alone for five or ten years it turns toasty and complex, which is the real reason to buy a few. Drink it cold. It handles seafood, Thai and Vietnamese food, and anything with chilli.
