Pewsey Vale Riesling. Riesling, and in Australia that means dry rather than sweet.

Citrus fruit and a steely edge, with acidity that keeps everything tight. It is almost never oaked, so what you taste is the fruit and the acid and nothing else.

Young it is all citrus and energy. Left alone for five or ten years it turns toasty and complex, which is the real reason to buy a few. Best served cold alongside seafood, sushi or a hot afternoon.
