Think stone fruit and citrus, with however much oak the maker wanted to show. How it lands depends on the barrel: unoaked versions stay tight and citrusy, oaked ones pick up a creamy, nutty weight.

Most are made to drink now, though the better ones hold for a few years. Serve it cold but not frozen. Roast chicken, creamy pasta and grilled fish all work.
